Cincoro is unusual before you get anywhere near the liquid. Highland and lowland agave are slow cooked in traditional ovens, then fermented and distilled entirely separately in small batches, and only afterward are the two distillates blended. That is more work and more tank space than a single source approach, and the point of it is to get both characters into one glass rather than averaging them out. It shows. The nose is fresh and cooked agave with citrus zest, light vanilla and soft minerality. The palate is smooth and layered, moving from sweet cooked agave through lime and grapefruit into white pepper and a gentle herbal edge, with a creamy mouthfeel that is the brand's signature. The finish is clean and silky and runs long. Drink it neat in proper stemware, where the highland and lowland layers separate out as it opens.
